This peasant woman brings olive oil in her earthenware jar. The jar, with its green-glazed neck, is a specialty of Aubagne, a small town in Provence near Marseille. Olive oil is used for cooking throughout Provence and is especially important for the famous Provençal garlic mayonnaise, l'aioli. One interpretation is that she collected oil for charity. She carefully holds her skirt up so as not to trip and loose her precious cargo.
