The snail merchant, the Woman with Snails, brings to the creche her earthenware pot of limacons - a traditional French delicacy (little grey snails atop a bed of fennel, boiled in salted water flavored with orange peel, according to the recipe for "l'aigo sau."). She attracts her customers with her charming Provençal song: "A l'aigo sau lei limacoun, nia de gros et de pichoun" which translated from the Provençaux language means "Brine snails here large and small." She has gathered the snails in the nearby hills. She carries a ladle, wears a light-colored dress, a black apron, and a large red flowered shawl crossed over her dress.
